The stereotype that omega-3 eggs must have an orange-red egg yolk has spread widely in society. With a market price up to three times higher than regular chicken eggs, omega-3 eggs seem to be perceived as "rich people's eggs."
So, do omega-3 eggs always have orange egg yolks? Or do eggs with orange-red yolks always qualify as omega-3 eggs? Unfortunately, that is not true...
According to Lisa Steele, a poultry expert and author, in a Fox News article titled "Does the color of an egg's yolk mean anything?", the color of an eggshell and its contents are influenced by several factors, such as the bird's health and genetics. However, yolk color can be modified by adding carotenoid pigments to the feed. These pigments occur naturally in various vegetables such as corn, spinach, and carrots, as well as in animals like tuna, salmon, and various types of shrimp. Carotenoids are also available in synthetic forms.
So, does omega-3 content affect yolk color? The answer is that it can—but not necessarily. Some sources of omega-3 also contain carotenoid pigments, such as red soybeans, corn, shrimp, and certain types of fish. However, other sources of omega-3, such as white soybeans, flaxseeds, tofu residue, and silk worms, do not contain carotenoids. On the other hand, some carotenoid-rich sources, such as carrots, spinach, tomatoes, and papayas, contain very little to almost no omega-3.
In conclusion, eggs with orange yolks may not necessarily be omega-3 eggs, and omega-3 eggs do not always have orange yolks. It is best to buy omega-3 eggs from experienced producers to ensure you get a product that meets your expectations. Additionally, maintaining the freshness of eggs is essential to preserving their nutritional content and ensuring they remain safe for consumption.
